Irish cows and lambs spend their days rotating between between lush green fields of the best grass on the planet. Irish offshore waters remain among the cleanest on Earth.
All this green goodness results in some of the finest raw ingredients to be found anywhere. Ireland's milk, meat, cheese, butter and fish are simply exceptional.
Traditional farmhouse wives had their well practised list of a few dozen basic recipes. Baked goods consisted of quick soda breads, slower whole wheat loafs, scrumptious tarts and cakes. Stews and roasts simmered away and, of course, there were lashings of potatoes.
In the recent past, however, two things have happened. The Irish have been exposed to world cuisines which they don't know how to cook and the younger generation has often lost the knack of making Mom's traditional recipes.
Fairyhouse Cooking School exists to correct both deficiencies. Traditional cookery, wok cooking, baking classes for men, women and children are among the course offerings. Wine courses, needless to say, are restricted to those over 18.
These classes are fun! Even those with two left spatulas love giving it a go. And, of course, eating the results.
